About our sausage

We coarse-grind heritage pork shoulder and belly, hand-mix with our seasoning blends, and stuff into natural casings. No fillers, no nitrates, no MSG. Just pork, salt, spices, and time.

Each package is approximately one pound, vacuum-sealed and flash-frozen. Five varieties cover most of what a household cooks across a week.

The varieties

Sweet Italian. Fennel-forward, gently sweet, the workhorse for pasta sauces, soups, and sheet-pan dinners.

Hot Italian. Same base, with crushed red pepper. Pair with broccoli rabe.

Zesty Italian. Garlic and herbs amplified, no extra heat. Family-friendly.

Breakfast Sausage. Sage, black pepper, a touch of maple. Crumble or patty.

Chorizo. Smoked paprika and oregano forward, fresh-style (not cured). For tacos, eggs, and rice dishes.

COOKING

Pan-sear over medium heat in a cast iron with a splash of oil. Brown all sides before reducing heat to finish through.

STORAGE

Freezer up to 6 months. Refrigerator up to 5 days after thawing. Do not refreeze.
